Superbowl Eatz

Whether you are entertaining or going to a Superbowl party we all know that Superbowl Sunday means lots of yummy food, especially apps!!  I wanted to share a few easy and yummy ones that are great to put out at home or take and go.  I have fed all of these to my family for dinner, as a full meal, so they are in no way limited to just appetizers.

Our family entertains on Superbowl Sunday and we have been fortunate to have spent it with the same family for the past 11 years.  I always know how many because it’s the exact age of my oldest who was born the Monday before the Superbowl in 2008.  We were brand spanking new parents, overwhelmed by this little creature we were now in charge of. Our lovely next door neighbors came over with food and spent that Sunday night with us and consequently, every Superbowl since.  It is our tradition and one that we look really forward to every year.  That little baby is not so little anymore!

We have done different variations of food every year but have stopped fully cooking everything.  We want to enjoy the time with our friends and not be stuck in the kitchen. This year I am going to make some apps and dessert and do some form of takeout for the rest, probably a sandwich tray, but I’m just not there yet.  I hope that if these recipes find their way onto your Superbowl table that you enjoy them!! xoxo, K

Baked Buffalo Nuggets

This is a recipe from skinnytaste.  They give you that buffalo flavor without having to deal with the mess of bones, which is a plus in our house because my husband will not eat wings without rubber gloves.  It ridiculous and hysterical and hopefully someday I will get a pic! Baked Chicken Taquitos


This is from Two Peas & Their Pod.  These were a total hit in our house.  They are the perfect finger food.  Add a little guac, some sour crème and pico de gallo and it is a full on taquito fun fest.  My husband ate these after he got home from work and they were still great, so that makes them perfect for entertaining.  Here’s the link: Baked Chicken Taquitos.

Parmesan Chicken Sticks

Who can resist meat on a stick?? These parmesan chicken sticks from, Ina Garten, are so good that they will be gone in a flash.  I promise you!! My daughter, who is not a huge meat eater, was hoarding them so her brothers couldn’t get to them. I used thin sliced breast cutlets to cut down on the cooking time.  The recipe calls for extra large eggs.  I only had large eggs and they worked just fine.  I paired these with a yogurt ranch sriracha dip, but honestly they are so good they don’t even need a dipping sauce.  Here’s the link: Parmesan Chicken Sticks.
