So, if you have scrolled through my Instagram you have seen a couple other muffin recipes.  Clearly, I like muffins!!  I was trying to think about why I enjoy them so and this is what I have determined.  They are easy! It is possible to whip up a quick dozen without too much effort and with stuff I have already in the kitchen.  Yesterday, I had one kid sick with a fever and the other two had a two hour delay due to the polar vortex, so I had some extra time in the morning.  It was a good morning for some muffins.

I thought about what I had on hand and found this recipe for Best Ever Greek Yogurt Chocolate Chip Muffins from The Busy Baker and this recipe did not disappoint.  I love baking with Greek yogurt, it lightens up baked goods in a surprisingly delightful way.  A couple of tips and tidbits about the recipe:  The recipe calls for 2 cups of chocolate chips. My usually chocolate obsessed daughter thought it was a bit too much, so to appease her I would probably reduce it to 1& 1/2 cups.  Do what ever you feel is right for you in the chocolate chip department though, I’m all for the more the merrier.  Also, I don’t keep paper muffin cups on hand.  To me it is just an extra step, so unless I really feel it is necessary or want to make something extra pretty I opt for spraying the muffin pan with Pam Baking with Flour.  Your muffins will pop right out of that pan.
